With late June marking the start of peach season, why not make the most of this sweet and fragrant fruit by making your very own jam? Perfect on hot buttered toast or scones for an afternoon tea with a twist, this sweet treat will have your friends requesting the recipe in no time.
We’ve teamed up with Staub to bring you this quick and easy recipe for a delicious peach jam, which also incorporates the flavours of juicy passion fruit. With just four ingredients this tasty recipe offers minimal effort for maximum taste.
Ingredients
Makes enough to fill 8 x 250ml / 1 cup canning jars
1kg or 2lb. 3oz. ripe peaches
4 passion fruit
500g or 1lb. 1.5oz. jam sugar (2:1)
Caviar of 1 vanilla bean
Method
1. Wash the peaches, cut in half, remove the pits and dice into small cubes.
2. Cut the passion fruit in half and scrape out the pulp with a spoon. Combine the pulp (including the seeds), jam sugar, vanilla caviar, and cubed peaches in a cocotte (Dutch oven).
3. Bring to a boil, stirring occasionally and then reduce heat and simmer for around 4 to 5 minutes.
4. While the jam is still hot, distribute it into sterilised jars. Seal the jars. For best results, store in the refrigerator.
