This Valentine’s Day, discover 3 Michelin starred Alain Ducasse at The Dorchester’s exclusively created ‘Heart for Two’, a dessert designed by leading Pastry Chef Angelo Ercolano.
Made of two unique halves of chocolate and passion fruit, the dessert is the ultimate finale for any foodie couple.
The left-hand side of the heart is composed of a passion fruit cream which is piped between two layers of chocolate mousse, and glazed with dark chocolate.
The right-hand side of the heart is a tangy passion fruit sorbet dipped in chocolate and covered by a thin sheet of milk chocolate, on the edges of which a line of Chantilly cream is drawn.
The inner portion is then filled with a passion fruit jam, and is covered by another sheet of milk chocolate with a small heart-shaped cut-out.
Lastly, both halves are joined together on a thin layer of chocolate biscuit and praline feuilletine.
The dessert is part of a unique Valentine’s Day menu and wine pairing created by Executive Chef Jean-Philippe Blondet and Head Sommelier Christopher Bothwell. Available exclusively on the 14th February for dinner, the menu features five bespoke courses, along with a glass of Rosé Champagne. Priced at £215 per person.
