As the sun kisses the horizon, an elegant white table cloth with sleek wine glasses and compelling fragrant cocktails hint at what is to come. A carousel of carefully curated dishes that showcase the results of Won’s culinary tour return to his Korean roots, include a delicate raw kingfish with cucumber, kohlrabi and sweet chilli, lightly crispy tempura crab with tofu, barley, courgette and soybean stew, a fall apart baked hake with a salty Comté crust, tender spicy Iberico pork and cabbage. Among others, a palate cleanser comes as a refreshing yoghurt sorbet with shizo granita and hibiscus.

With lesser known flavour combinations are unusual drinks pairings. With the option to pair this limited menu with either wine or cocktails, expect Korean specialities such as Soju which is served with tonic and cucumber; a sweeter plum wine and a rich and cloudy rice beer. These are all complimented with a collection of wines from Europe’s most respected regions.
