Head chef Tashyaa Mehrotra leads the kitchen brigade at the only 100 per cent vegan restaurant in Delhi with sustainable cooking as the base of her ethos.

Upon entering Delhi’s bustling Basant Lok Market in Vasant Kunj, locating People of Tomorrow might prove to be a challenge. Nestled in a less conspicuous block and sporting a modest signboard, the stage is subtly set for what lies ahead at this hidden gem. As you step into the realm of conscious dining, with culinary visionary Ritv Kapoor at the helm of this farm-to-table gem, you know this isn’t just a restaurant; it’s a movement inviting Delhi’s denizens to embrace the vibrant world of veganism.

The walls tell a tale of sustainability, adorned with a coating made from Multani Mitti, a breathable material which doesn’t trap moisture and lasts much longer along with the benefit of it being sourced locally and, thus, having a lesser carbon footprint.

The true standout is undeniably the food. In this softly-lit, subtly enchanting setting, indulging in meat-free dining is a serene delight, with each dish unquestionably delicious. Head chef Tashyaa Mehrotra revealed the captivating tale behind the menu: it’s a collaborative masterpiece featuring culinary talents Anahita Dhondy Bhandari, Surabhi Sehgal, Dhruv Nijhawan, Sambhavi Joshi, and Anukriti Anand, each contributing their creative essence to the menu.

Prepare to be spellbound by dishes so tantalising they will make you forget you’re savouring a vegan feast – a testament to the culinary magic at play in this enchanting sanctuary. Embarking on my gastronomic voyage, I savoured a symphony of flavours. Anahita’s creation, the tofu akuri, was a harmonious marriage of spicy tofu and Parsi sambhar masala on a crisp bun, setting a delicious tone. Embracing the winter spirit, the ‘baby jewels’, roasted baby carrots, exquisitely showcased seasonal vibrancy that delighted the taste buds.

Chef Surabhi’s empanadas, bursting with creamy spiced mushrooms, corn, and beans along with zesty salsa, proved delightful, while ‘mucho bueno’, a lively salad of charred corn, beans, and veggies in coriander vinaigrette, was a sensory treat. From chef Sambhavi’s repertoire, the puttanesca blended fusilli with a rich tomato, caper, olive, and chili medley, made for a truly Italian delight. The ‘big biang biang’ from the memoir collection, featuring thick hand-pulled noodles bathed in chili, garlic, and peanut sauce, evoked a deep culinary connection I couldn’t resist. Savouring these diverse, flavourful dishes resonated with each bite.

Chef Dhruv’s ‘tomatoes of tomorrow’ showcased surplus produce, embodying the restaurant’s zero-waste ethos, evident in every dining facet. In this dish every part of the tomato is used, right from the skin to the leftover pulp that is used to make the jerky. The resources used for the production of these elements are energy-efficient, often using residual heat and the sun to dry. Concluding our culinary voyage, the enigmatic offerings of gomae salad and tartare de nasu by the elusive ‘Shhhhhh-Ef’ promise a clandestine delight for the worldly epicurean’s refined taste buds. Chef Anukriti’s masterpiece, the divine caramel hot chocolate fudge, was a sweet closure to a memorable dining affair.

The cocktails were magical too, for example, the clarified pina colada uses the discard of the clarification for topping up the tipple with a popsicle that complements the drink, demonstrating that sustainability and culinary excellence can coexist harmoniously.

Beyond its sumptuous dishes, the restaurant embodies vegan principles in every facet, beckoning guests to experience a holistic ethical lifestyle. Its meticulously designed menu is a treasure trove of culinary delights, a departure from the ordinary that will enchant even the most discerning palates. What truly impressed me was the restaurant’s dedication to veganism intertwined with sustainability. The upcycled décor, from the charming wooden furniture to the eco-conscious brass cutlery and conscious packaging, conveyed a strong environmental ethos. Collaborations with ethical fashion brands and a plastic-free kitchen further illustrated their commitment to a greener future.
