Hotel Review: 7Pines Resort, Ibiza in Spain

Es Vedra is a magnetic catalyst shining a spiritual spotlight on the White Isle. Shrouded with myths and legends, this unpopulated neighbouring island casts itself high above the ocean on the Western side of Ibiza, drawing in those from all corners for striking rose swept sunsets.

Es Vedra is a magnetic catalyst shining a spiritual spotlight on the White Isle.

Moments along the cerulean ocean from Es Vedra between Cala Conta and the secluded Cala Codolar is 7Pines, one of the island’s latest and most luxurious hotels which opened in 2018. Suitably tucked away from Ibiza’s famous debauchery, 7Pines reveals an alternative persona to this often-unseen creative, spiritual and laid-back Mediterranean island. Celebrating the end of each day with the strike of a gong as the sun kisses the horizon, this hotel captures the heritage woven within the holistic side to of the island.

Tailored to its inspiring setting and open to hotel guests and visitors alike is 7Pine’s fine-dining restaurant The View. Honouring the heritage of the destination with ancient Asian cooking techniques, The View frames its unmissable setting with a 40-metre contemporary glass façade lining its periphery. The epitome of gourmet refinement, The View’s modern Asian cuisine includes sizzling meat dishes, fresh fish and vegetables from the Robata Grill. A great example of this is the restaurant’s five course tasting menu, revealing a variety of produce from its kitchen, in partnership with the panoramic evening performance.

The carousel of dishes is as unique as its luxurious locale. Following an amuse bouche and exotic cocktails, the five course tasting menu proceeds with dishes that exploit local fresh produce and ingredients, elevated by fragrant, exotic textures and flavours. As the sky develops into a rich orange hue as the sun disappears from sight, we resume with local “sirvia” ceviche and gamba roja served with spiced coconut before moving onto a middle course of sautéed Mediterranean calamar, Char siu barbecue pork topped with Ibizan almonds.

Swapping between sea and land, this is followed by a fish course of octopus from the Japanese robata grill with panko and gochujang and a humbly sized main course of tender Wagyu striploin with black garlic and Chinese cabbage. As the stars reveal themselves above, dessert arrives – a matcha tea cremeux with granny smith apple and Thai basil. As creative as the crowd, the spiritual destination attracts itself, this five-course tasting menu is ideal for if you’re looking for a congregation of dishes that highlight flavours, textures and ingredients from across the wider à la carte menu and can be paired with its considerable wine collection.

7Pines opens its arms to all ages looking to connect with what is widely considered the most beautiful side to Ibiza.
